In 2018 he founded the holding company Pellegrino Brothers with his partner Isabella Potì. The company currently holds the rights to the Bros' brand, owns Bros'Trattoria in Scorrano, and handles the promotion of the two talents, Isabella Potì and Floriano Pellegrino.
He founded the Bros Rugby Club, also run by the holding company, committed to the reintegration of young people from the outskirts of Puglia into a virtuous circuit that, through sport, aims to involve them in the Italian and international professional scene.
His passion for cooking was born within the walls of home: his family ran a farmhouse inn in his hometown, Scorrano. From a young age he showed a strong aptitude for food and cooking in general, so much so that he helped, together with his two brothers, in running the family business. After finishing his hospitality studies, he left Salento and travelled throughout Europe, landing in some of the greatest starred kitchens, from Luis Andoni Aduriz, Eneko Atxa, Alexandre Gauthier, Rene Redzepi to the Frenchman Claude Bosi in London.
Among all these experiences, the one at the side of chef Martin Berasategui marked his professional and personal journey the most, giving him, in terms of growth, the attitude needed to quickly become a complete contemporary chef."
In 2016 he won the Top di Domani award, Touring Club, Surprise of the Year from Identità Golose, and the Twenty Years Award for San Pellegrino and Acqua Panna.
In 2017 he received the Performance of the Year award from the Espresso guide.
On January 22, 2018 he was included in the Forbes 30 Under 30 list in the Art category, and in September he received the Rising Star award at The Best Chef Awards. In November 2018 he earned his first Michelin star, and the following year he was invited to cook at the gala for the presentation of the 2020 Michelin Guide.
In 2019 he received the Social Chef of the Year award at the Food Community Awards, and his restaurant Bros' reached 4 hats in the L'Espresso Guide. In January 2020 he took part, with one of the main presentations, in Madrid Fusion, one of the world's most important gastronomic events; in September he reached position 77 in the Top 100 of The Best Chef Awards and won the "Prix au Chef de l'Avenir" from the Académie Internationale de la Gastronomie. In May 2021 he won the award for innovation in the kitchen.
At the gala in Amsterdam for 'The Best Chef Award 2021' he claimed #69 among the 100 most important chefs in the world.
